Anything cooked in wine or spirits can be ubriaco.
Formaggio Ubriaco, a raw cow's milk cheese invented in Treviso, aged for 12 months, and then soaked in wine (or grappa or even prosecco), giving it its unique taste. They say it was invented during the First World War, when cheese-makers hid their rounds from the Austrians in wine barrels, then liked the taste.
Generally it has a purple rind, and a taste like a mature cheddar, but spicier.
