A very traditional pale yellow cheese made throughout Italy out of any kind of milk, caciotta is mild and soft and shaped in a cylinder.
Sheep and cow's milk Casciotta d'Urbino (PDO) has been made in the northern Marche at least since the 15th century. Michelangelo loved it so much he bought land in the area to make sure he would always have a ready supply.
