barley, or barley-shaped pasta
In Italy, barley is strictly for horses and health nuts, but the little barley-shaped pasta of the same name is popular in soups, salads and oven dishes. It's also the name for a barley drink.
The Sloww Food Presidium includes a historic variety, the antico orzo delle valli bellunesi raised in the valleys of the Dolomites.
