Not mortadella—though something like mortadella is often commercialized under this name. Real mortandela is a traditional product of the Trentino, usually made at home.
It's a sausage without a casing, made from cheaper pork cuts and sometimes liver, flavoured with different spices in different kitchens, used fresh, cured or smoked, and formed into a large meatball shape. Often served with polenta, or in a risotto.
