Marzotica

Pugliese sheep's milk cheese

A spring cheese from the province of Lecce (its name comes from Marzo or March) is a favourite in pasta dishes, similar to a crumbling slightly aged ricotta. It comes in cylinders, often wrapped in leaves of grass. Designated PAT.
