Rare and officially protected now, sturgeon have always been present in all the important Italian rivers.
Since 1981, Agroittica Lombarda in Calvisano has farmed eels and also white sturgeon from the USA, original for the fish's meat, but now for caviar; in fact, it's now the world's largest caviar farm (producing 20 tons a year, and exporting it around the world).
