tagliatelle paglia & fieno: paglia is the green, spinach-coloured (hay) and fieno is the yellow (straw) tagliatelle. Common sauces are bolognese, marinara, or cream.
Fieno is also a kind of fine yellow pasta made in Lazio that resembles straw before it's boiled; it's also known as maccaroni canepinesi.
Formaggio nel fieno: made in Friuli, is cheese matured in hay.
