In the local dialect, Scimudin means 'little cheese'. Made from triple cream unpasteurized cow's milk (sometimes with some goat's milk as well) with a bloomy soft crust and mild mushroom aroma, it is the Italian cheese that most resembles French Brie, with a gooey soft texture. It's served as a table cheese but is also used in cheese sauces, as it melts easily.
