char or brook trout
Salvelinus fontinalis. Much like a trout, with conspicuous light-coloured spots. Also called salmerino di fontana.
The salmerino del Corno alle Scale from a small nature reserve in Emilia-Romagna's Apennines is in the Slow Food Presidium.
