The 'Soup of Virtue' is a most famous soup of the Abruzzo that few have ever tasted. Traditionally made for May Day festivals, notably in Teramo, it features:
7 types of dry pulses
7 types of fresh pulses
7 types of vegetables
7 types of meat
7 shapes of pasta
7 seasonings
and is cooked for 7 hours.
A dish best enjoyed out of doors.
