Scores of recipes: susumelle nearly always have honey and are generally spicy, with cinnamon and cloves. with or without almonds, usually frosted or covered in chocolate. In Calabria, elaborate susumelle with nuts and candied fruits are made at Christmas. In Naples, they are hard and S shaped, and covered with sesame seeds or almonds and can be called sapienze because they were once made by nuns in the Monastero della Sapienza.
A wide variety of biscotti calling themselves susumelle have also been spotted in Lazio and elsewhere around the nation.
