Italians like Popeye like it a lot, on pasta, or in it (the green-coloured tagliatelle, spaghetti, etc. are made with spinach), or stuffed inside it, as a common filling for tortellini or capelletti. Plain spinach, steamed, boiled or sautéed with oil and lemon is a popular side dish. Baby spinach is spinacino.
With ricotta, it's also used as a filling for pies and pastries.
