One of Italy's more distinctive breads, coppia ferrarese, 'the Ferrarese Couple' is a sour-dough made with lard, olive oil and malt and twisted into an X-shape; the recipe dates back to the 12th century. Fans say it's the best bread in the world. baked in a wood fired oven, it approaches the soft-crunchy dichotomy of a French baguette.
It's also known as a ciopa, ciupeta or ciupèta.
