Felciata di Morano

'fern' cheese

An unusual soft cheese of mostly goat (and a little sheep's milk) made in the summer in Morano Calabro. After heating and coagulating, it is traditionally set in a wooden bucket filled with ferns. It's best eaten fresh, while still warm.
