At 2757m, the Passo di Stelvio in Alto Adige is the highest paved mountain pass in the eastern Alps, and a favourite challenge on the Giro d'Italia bike racing circuit. The cheese that bears the same name has been made in the region since the Middle Ages, when farmers often paid their rent in cheese. Pale yellow in colour, it is an aromatic, somewhat spicy cheese with a velvety texture. It's often used in pasta dishes, or cooked with veal and even in cheese puddings.
