Or Squalius cephalus, this boney fish not a 'prestigious' catch in the Italian lakes, and one that you'll rarely see in fancy restauarnts. But it's tasty, especially if someone filets it for you. The bones also are less of nuisance if it's deep fried.

Other names are cavasì and cavassìno.
