Cloudy white almond syrup, made of ground almonds simmered in water and sugar, and sometimes flavoured with spices such as cinnamon and cloves. It's similar to orgeat, but minus the barley, and designed to be diluted in cold or hot water.
Made on Crete, Léfkada, Nísyros and Chíos, and often served on special occasions; sometimes it's used as an ingredient in desserts as well.
