Lavendar, Red Wine Vinegar, Olive Oil, Salt - Hellenic Republic

Vinegar. In Greece it will always be red wine vinegar unless otherwise stated.

βαλσάμικο ξύδι (balsámiko xýdi) balsamic vinegar

ξυδάτο (xydáto) in vinegar. A common way to cook octopus.

ξύδι μήλου (xýdi mílou) apple vinegar

ξυδόνερο (xydónero) This is vinegar water, sweetened with sugar or honey, a refreshing pre-industrial drink similar to the ancient posca drunk by the armies of Rome and Constantinople. The vinegar kills many of the bacteria and quenches thirst; when the Roman soldier gave Jesus on the Cross a sponge soaked in vinegar for his thirst, it was an act of kindness.
