Thin pancake made with flour, salt and water, fried in olive oil, then rolled or layered around a filling, usually savoury.
The classic version, πέτουλες της Μεσσηνίας (pétoules tis Mesinías) from Messenía, are layered with myzíthra, olive oil and herbs.
Also known as νερόπιτες (nerópites)—‘water pies.’
