Lamb or goat intestines wrapped around seasoned offal (the bits that haven't gone into the mageirítsa) and grilled on a spit. It is a classic of Greek Easter, when everyone has nibbles while waiting for the lamb to be done, but it's also available year round in many tavernas that specialize in grills.
