Spinach and cheese pie, one of the best loved Greek dishes.
The classic version includes spinach, feta, green onions, fresh dill, mint, parsley and eggs in pyllo, but there are a thousand variations on the filling (many cooks add lemon zest and nutmeg, many use a variety of greens instead of spinach or a different salty cheese, or add leeks as well as onions, or make their own choriatikó 'country-style' pastry).
During Lent, the nistisimo version omits the cheese and eggs.
