Au bouchon

They don’t make many cheeses in the Dordogne, but the ones they do make are unusual and tasty like the Trappe d’Echourgnac.

Produced since 2015, Au Bouchon is made of local cow’s milk among the Bergerac vineyards of Purple Périgord, but the cork in the middle of each cheese isn’t just there for novelty’s sake— it prevents the creamy, slightly tangy cheese from collapsing in the centre as the ripening softens the paste. It’s very tasty with walnuts.
