Although Machecoulais sounds like ‘chewy’ (mache) and ‘runny’ (coule), it is neither—the name comes from Machecoul, where it’s manufactured, in the Petite Laiterie du Marais Breton.
Made of rich raw cow’s milk, with an unusual oval shape, this washed rind cheese is sold in a pretty barquette with a rose coloured lining. Aged for a month, it’s exceptionally soft and creamy, and often available in Paris.
