A Croquine comtoise is a little ball of dark chocolate, filled with a special praline cream and covered with a very thin biscuit coating to keep it from melting all over your fingers.
Croquines are a speciality of the Chocolaterie Le Criollo in Chalezeule. They also make Faïencines, celebrating the faïence of Nièvre: it’s a square of spicy praline, coated in white chocolate and shimmering blue on top.
