According to legend, the recipe for the gâteau creusois (also known simply as Le Creusois), is the iconic hazelnut cake of the Creuse in the Limousin, based on a 15th-century recipe discovered in a local monastery in 1969.
The current recipe is a secret kept among 30 bakers in the Creuse; homemade recipes include flour, butter, sugar and egg whites.
