Unlike other nougats, Nougat de Tours is a cake dating back to the Renaissance, made with a sweet pastry of butter, sugar, flour and an egg white, filled with apricot jam and diced fruit confit (preferably melon and papaya) and topped with macronade (egg whites, sugar and powdered almonds).
The Confrérie du Véritable nougat de Tours is dedicated to making sure no one messes with it.
