The most famous Belgian stew, waterzooï was a favourite of Emperor of Charles V and often appears on menus in the Hauts-de-France.
Made with sea or freshwater fish or with chicken, it includes carrots, onions, leeks, potatoes and parsley in a vegetable stock thickened with an egg yolk and cream, often with a splash of beer or white wine added at the end.
