Soupe aux cerises au vin rouge or soupe de cerise is an unusual summer dessert, made with fresh pitted cherries, a red Bordeaux, powdered sugar, cornstarch, cinnamon, star anise and cloves. The cherries go in last, after the rest is simmered and velvety smooth; some put it all in the blender and like it hot, some like it chilled with a dollop of crême fraîche or vanilla ice cream.
