Barousse

Made around Sost in the Barousse valley in the Hautes-Pyrénées, Barousse is a rustic cheese made from raw sheep's or cow's milk or a mixture of the two. It is an uncooked pressed paste made by hand by the producer, with a powerful aroma of hay, although the taste is quite mild.
