Matefaim or matafan ‘the hunger queller’ is an age old dish from Lyon that has evolved. Some versions, especially the sweet ones, are like a fat crêpe filled with apples or rolled up with fruit or jam.
Or it could be a fat savoury crêpe made with flour, eggs, water and soft cheese, and sometimes with potatoes crushed inside. Some versions are made mainly with potatoes, similar to a crique ardéchoise, as a side dish.
