‘little gem’ lettuce

Usually sold in packages of three, sucrine or little gem lettuce is a cross between romaine and butterhead (laitue pommée) lettuces. It’s mostly grown in the south of France, where they call it craquerelle du Midi.

Sucrine is crunchy, good in salads, and firm enough to be braised.
