Ballan wrasse

This is a photography of a Special Area of Conservation in Spain with the ID:

Labrus bergylta. The Ballan wrasse’s name, vieille, means ‘old woman’ in French. It has a lot of bones and is hard to de-scale, which makes it best suited for a soup, such as cotriade. Big ones (they grow to about 60cm) are often made into a terrine.
