Biscuits in French are dry little cakes, but unlike a biscotte, they no longer have to be twice baked to be a ‘biscuit’, but they need to have some crunch.
What an American would call a ‘cookie’ is a biscuit in French, but only chocolate chip cookies are ‘cookie’ in French (don’t ask me why!). Shortbread cookies are sablés.
