Mâconnais is a little goat’s cheese shaped like a truncated cylinder. Made from the milk of alpine and poitevine goats, who dine only on meadow grasses and flowers and grain, the cheese comes in three types: Jeune affinage blanc (fresh, aged 12 days) Piqué Bleu (the blue spots that appear after 15 days) and bleu, after three weeks in the cave, the strongest, with more of a mushroom flavour.
