Jésus de Lyon is a big bundle of quality pork meat (ham, shoulder, belly and fat), seasoned with red wine, garlic, peppercorns and spices. It’s stuffed into a wide casing called a sac de porc, which gives the sausage its characteristic shape, before it is tied up to dry...and hence the name: it looks like a swaddled baby Jesus.
It is similar but softer than rosette.
