If you order a parfait for dessert in France, you may get something a bit different from what you were imagining: it’s made with custard cream, egg yolks or fruit purée or syrup (brandy, coffee, dark chocolate etc) and whipped cream, poured into a special parfait mould with a rounded bottom, then frozen.
They can be served as they are, or as a base for other desserts—as in the photo above.
