Exclusively handmade in Savoie and Haute Savoie from the milk of local Alpine and Chèvre de Savoie goats, Chevrotin is an atypical goat’s milk cheese—raw milk, pressed into a mould with a washed rind, aged for at least two weeks. Each of its 24 producers and five affineurs have their own secrets, so there is quite a lot of variety. Many are organic.
