Livarot is nicknamed ‘the Colonel’ because of the five stripes around the sides, left by the rings of reeds tied around the rind that once kept it from collapsing when maturing.
A soft cow’s milk cheese made of raw or pasteurized milk with a washed orange rind, it’s quite pungent...with an aroma sometimes compared to smoked meat. Aged six to eight weeks; AOP since 1975.
