pinenuts

Pignons des pins (in the south of France, where they come from, pine nuts are also called pignoles) are sold in small bags, sometimes hidden away in the baking section by the almonds, because the French like them best in pastries. They are quite expensive, but an essential ingredient in Nice’s tourte aux blettes.
