Invented in France in the mid 19th century, this sauce, popular around the world with fried fish, is made with mayonnaise, vinegar, mustard, chives, chopped gherkins, and tarragon or dill.
Perhaps because it lacks the finesse of classic French sauces, it was named after those reputed roughnecks, the Tartars (as it was in steak tartare).
