When we moved to France in the late 1980s, topinambours—Jerusalem artichokes—were impossible to find. No one liked them because they reminded people of what they had to eat during the Second World War.
They are easier to find now, and many chefs like to do very creative things with them, but they still don’t seem to be a big favourite. Possibly because they are known to make you fart.
