Cantharellus cibarius. One of the best loved and most common woodland mushrooms, appearing after the late summer rains, girolles would be perfect if they weren’t so annoying to clean. Dirt sticks in their tiny folds like glue! But it’s worth patiently brushing it out because they taste so good.
Mushroom hunters say that they have become victims of their own success in some areas and are becoming harder and harder to find.
