The French love their feuilles de laurier or bay leaves, and the trees (laurier vrai, laurier-sauce, laurier noble or laurier-d’Apollo) grow all over France, in nearly every garden, ready to add their special flavour to sauces and stews. They are invariably part of a bouquet garni.
