Slipper Lobster

The cigale de mer or ‘sea cicada’ is rare in the Mediterranean and protected; if available in France, it’s very expensive.

Also known as popinée, it’s far more common around Nouvelle-Calédonie. Their tails feature in simple dishes, fried or served with peppers and tomatoes.
