A classic cheese from the Champagne region produced since the 15th century, firm and soft at the same time, Chaourse is said to be the only cow cheese with a bloomy rind in the shape of a high cylinder (instead of disc shaped one like Camembert). Because the moulds are much taller than wide, they can contain a large quantity of curd.
Chaourse comes in two sizes, neither very large; it’s all made in the local dairies.
