Crème caramel is a flan, usually prepared in ramekins in a bain-marie, often flavoured with vanilla, lemon, orange or cinammon, with a caramel sauce. It’s one of those desserts everyone seems to remember their grandmother making for them.
It’s also known as coque au lait, oeufs au lait, coq au lait or crème renversée, as the pudding has to be turned upside down to finish.
