bisque

A French soup served around the world, bisque is made from lobster, crab, langoustines or prawns (generally just their heads and shells). These bits are slightly sautéed, simmered with white wine, garlic, tomato and herbs, then strained, mixed with cream and topped with chives and croutons.

The name is believed to derive from bis cuit or twice cooked.
