Sometimes called betterave potagère or betterave rouge to specify that it’s a beet or beet root and not a betterave sucrière (sugar beet).
You can find beets raw in the market, but far more common are beets that have been peeled and precooked and sold in vacuum packs, ready to add to a salad or other dish.
